Description
Stokely Enterprises and its properties provide excellent, southern hospitality to more than a million guests per year. Come work in an exciting atmosphere and learn what it takes to operate Sevierville’s oldest restaurant. Working with the executive chef, general manager, and our seasoned staff, the goal of our internship is to teach interns the necessary skills to provide superior customer service, offer a quality guest experience, and effectively manage a business while confidently working with others.
This internship requires interns to be dynamic and flexible as they will learn the essential job duties and managerial functions of both the front and back of house operations. This includes:
- Understanding the structure of a restaurant: back-of-house, front-of-house, and various departments of both
- Learning and assisting with opening/closing duties
- Understanding the development, design, preparation, and execution of recipes
- Using proper food handling, safety, and sanitation procedures
- Complying with health and safety regulations
- Learning financial cost-controls related to costing, ordering, inventory, and sales
- Identifying key financial documents related to costing, pricing, and sales
- Shadowing Executive Chef, General Manager, Assistant Manager, and Director of Sales
- Learning managerial tasks related to interviewing, hiring, training, retaining, and scheduling
- Engaging in roles related to flow of service: hosting, serving, preparing floor plans, assisting group sales, managing discounts, etc.
Other Duties and Responsibilities:
- Meets with the General Manager and Executive Chef regularly to discuss internship progress and set future goals.
- Performs all other duties and responsibilities deemed to be an integral part of the job.
