Real-life experience and resume credentials: The Culinary Intern is a unique opportunity to work alongside professionals who manage food preparation and service in various settings within a Resort Hotel. Spend your semester discovering your abilities in our unique culinary environments. Build your knowledge as you train for safety and food compliance with sanitation practices, and preparing food items according to recipe guidelines such as; outrageous milkshakes at Scoops, craft barista skills at ReFuel, and plating jumbo skillets for our family-style breakfast at Granny Cluckets.

Primary Essential Duties & Responsibilities:
Interns typically work 8-hour shifts, based on resort occupancy and staffing demand. Holidays and weekends are affected by peak demand which means all team members must work together during those days to keep the SMR property running efficiently. (The Corporate Director of Operations has the authority to modify intern work schedules based on semester and hours requirements). Within their respective assignments the Intern will:
- Be responsible to take food and beverage orders, prepare food menu items according to recipe guidelines, adhere to sanitation guidelines and serve food and beverage items.
- Complete orders as directed and in a timely manner to meet capacity demands.
- Compliance with Food safety in regard to the conditions and practices which preserve the quality of food, to prevent contamination and food-borne illnesses.
- Adhere to ServSafe training guidelines including, but not limited to; handwashing, food storage, cooking temperatures, hot and cold holding parameters, and equipment, infrastructure and eater requirements.
- Understand all safety regulations to comply with the operation of systems and equipment.
- Adhere to ABC licensing regulations in food facility locations where alcoholic beverages are served.
- Exception: Team members under the age of 18 and/or part-time, would not be scheduled to work in Nonnaroni’s and/or Snack Shack due the selling of beer. They will not be required to obtain an ABC license.
- Instruct guests on how to operate cashless payment systems.
- Host a safe and interactive environment that all children and families can enjoy.
- Multitask alongside fellow culinary specialists.
- Compliance with TOSHA certifications, biohazards procedures and responsibilities for safety in handling.
- Knowledge and ability to comply with all company operating policies and procedures.
- Perform other incidental and related duties as required and/or assigned.
- Management reserves the right to change, remove or add to these duties as necessary.

Education / Experience:
- High school diploma or equivalent is required.
- Enrolled in an accredited University or College, (or recent graduate, up to 2-years) is required.
- Experience in one or more of the following areas/industries is preferred which includes: Hospitality, Culinary and Restaurant.
- Pursuing a degree related to Hospitality or Business is preferred.
- Certification for ‘ABC’ (Alcoholic Beverage Commission) license is required within 5 days from work start date. Exception: Under age 18 and/or part-time working at Nonnaroni’s and/or Snack Shack.
- Certification for ‘ServSafe Food Handler Program’ is required within 30 days from work start date (Basic Food Safety, Personal Hygiene, Cross-Contamination and Allergens, Time & Temperature, & Cleaning and Sanitation).
- Ability to work within a diverse workforce.
- Reliable transportation is required.
